Smashed Pork Tacos with Pickled Onions and Cilantro

Ingredients

Tacos:

  • 1 lbs ground pork
  • 1 tbsp fresh garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 tbsp soy sauce
  • 1 tbsp TFM honey
  • 1 tsp cayenne
  • 1 tsp onion powder
  • 6 corn tortillas
  • 2 tbsp avocado oil

Glaze:

  • 3 tbsp soy sauce
  • 3 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp hoisin sauce
  • Juice and zest of 1 lime
  • 1 tsp gochuchang sauce
  • 1 tsp fresh ginger, minced

Garnish:

  • pickled onions
  • cilantro

Directions

In a large bowl, mix together ground pork with garlic, ginger, soy sauce, honey, cayenne, and onion with a fork.

Divide into 6 equal portions and firmly smash into a thin layer on the corn tortillas.

In a small bowl, combine all the glaze ingredients. Set aside.

Preheat a cast iron skillet on high. Add a little avocado oil. Place the pork tortilla meat side down in the skillet. Sear 3-4 minutes. Flip and sear 1-2 minutes on the tortilla side. Brush the pork side with glaze and flip for a final 1-2 minutes.

Serve with pickled onions and fresh cilantro.
