Tropical Jackfruit Salsa

Ingredients

  • 2 c jackfruit arils, diced
  • 1 c pineapple, diced
  • 1 c cucumber, seeded and diced
  • ¾ c red pepper, diced
  • ¼ c jalapeño, seeded and finely diced
  • ¼ c cilantro, chopped
  • ¼ c lime juice
  • 1 tsp kosher salt

Directions

Add all of the ingredients to a large bowl and toss to thoroughly combine.

Serve immediately with corn tortilla chips or plantain chips.
