- 2 c jackfruit arils, diced
- 1 c pineapple, diced
- 1 c cucumber, seeded and diced
- ¾ c red pepper, diced
- ¼ c jalapeño, seeded and finely diced
- ¼ c cilantro, chopped
- ¼ c lime juice
- 1 tsp kosher salt
Add all of the ingredients to a large bowl and toss to thoroughly combine.
Serve immediately with corn tortilla chips or plantain chips.
