Marsh Hen Mill: Greg Johnsman’s path to Marsh Hen Mill began with two love stories—first for old-fashioned milling techniques, then for his college sweetheart while studying poultry science at Clemson University. After college, the lovebirds settled in the South Carolina Lowcountry, where he eventually discovered a 1945 mill and separator in Saluda. It rekindled his boyhood fascination with milling techniques he’d learned from a third-generation miller and mentor. What started as an after-work and weekend hobby soon grew into Marsh Hen Mill—a name derived from Greg’s affinity for birds. He now uses time-honored traditions to turn heirloom grains into stoneground deliciousness for tables everywhere.
