Ingredients
- 1-2 tbsp vegetable oil*
- 4 chicken or shrimp cutlets or salmon burgers
- Tropical fruit
- ¼ c salted butter,* softened
- 4 The Fresh Market soft golden hamburger buns
- Terrapin Ridge Farms Aioli of choice
- Honey Lemon Bowtie Pasta or Loaded Baked Potato Salad
Directions
For Chicken
Stovetop (preferred method): Heat oil in a large nonstick skillet over medium-high heat. Add chicken cutlets and lower heat to medium, cooking 10-12 minutes until cooked through,** turning once during cooking. Transfer cooked cutlets to a paper towel-lined plate.
Air Fryer (preferred method): Preheat to 400°F. Cook chicken cutlets 10-12 minutes until cooked through,** turning once during cooking.
Oven: Preheat to 375°F. Place chicken cutlets on a foil- or parchment-lined sheet pan in a single layer. Bake for 15-20 minutes.**
For Shrimp Cutlets:
Air Fryer (preferred method): Preheat to 375°. Place shrimp cutlets in a single layer in the air fryer basket or rack and cook for 7-10 minutes until cooked through.**
Oven: Preheat to 400°F. Place shrimp cutlets on a sheet tray and bake for 10-15 minutes.** Stovetop heating not recommended for shrimp cutlets.
For Salmon Burgers:
Stovetop (preferred method): Heat 1 tbsp vegetable oil* in a large skillet over medium-high. Turn heat down to medium, place burgers in pan and cook for 8-10 minutes, turning once during cooking, until cooked through.** Remove the burgers to a plate.
Air Fryer: (preferred method): Preheat to 400°F. Place burgers in air fryer. Cook 8-9 minutes until cooked through,** turning once during cooking.
Grill: Preheat to medium-high. Lightly oil grates with vegetable oil.* Place burgers on grill and cook for 4-5 minutes per side.** Reduce heat to medium or move burgers to cooler location if they begin to burn.
To Serve: Spread the salted butter evenly on the cut side of buns and toast if desired. Place chicken, salmon burgers or shrimp cutlets on bottom buns. Top with sauce and top bun and serve immediately with pasta or potato salad.
**Cook all meal components until internal temperature reaches 165°F.
