Ingredients
- 1 tbsp vegetable oil*
- 4 chicken cutlets or 20 oz Atlantic salmon fillet
- ¼ c The Fresh Market Spice Rub & Marinade of choice
- 1 lb creamy macaroni & cheese
- Tropical Fruit
Directions
GRILL: Preheat grill to medium-high heat (400°F). Lightly oil the grates with vegetable oil.* Season the chicken or salmon with The Fresh Market Spice Rub & Marinade of choice. Place the protein on the grill grates and grill, 8-10 minutes for chicken and 10-12 minutes for salmon, turning once during cooking.
OVEN: Preheat oven to 425°F. Line a sheet pan with aluminum foil or parchment paper. Season the chicken or salmon with The Fresh Market Spice Rub & Marinade of choice. Arrange the protein in a single layer on the sheet pan (skin side down for salmon), place in the oven and bake 15-18 minutes for chicken and 12-16 minutes for salmon.
While protein is cooking, remove the macaroni & cheese from its packaging and place into a microwave-safe container. Cover and microwave on high 3-4 minutes, stirring once during cooking, until warmed through.
To serve: Divide macaroni & cheese, protein and tropical fruit onto 4 plates and serve immediately.
