Q: How did you decide you wanted to become a chef? A: I was waitressing in a restaurant in Cleveland, and one day one of the line cooks didn’t show up for his shift. My manager looked at me and said, “Can you cook?” I assured her I couldn’t, but she threw an apron at me and said, “Get in the kitchen.” So I did. I was terrified for about six seconds, but then I felt a strange sense of calm come over me like I’d found my home.
