- 1 c. arugula (kale or spinach can also be used)
- 1 c. frozen mango
- 2 Navel oranges, 1 peeled, 1 supremed (reserve supreme pieces for topping)
- 1 banana, frozen
- 1 tbsp. fresh lemon juice
- 1 tbsp. honey
- 2 tbsp. plain Greek yogurt
- 2 tbsp. pepitas, toasted
Combine arugula, mango, 1 whole peeled orange, banana, lemon juice and honey into a heavy-duty blender and blend on high until thoroughly combined and smooth. Taste for sweetness, adding more honey if desired.
Pour the smoothie into a wide mouthed bowl and top with a dollop of Greek yogurt, pepitas and reserved orange supremes.
