In a medium sized bowl, add butter, garlic and pepper, and stir until everything is well combined. Transfer the butter to the center of a sheet of plastic wrap and shape into a log. Wrap butter, twisting the ends of the plastic wrap to secure everything, and refrigerate until firm. Store at room temperature if using within a day, otherwise refrigerate.
Brush over prime rib while it’s roasting, or serve atop steak or filet mignon.
