Asian Chicken Salad

Ingredients

Dressing:

  • ¼ c. reduced-sodium soy sauce
  • ¼ c. Justin's Classic Almond Butter, well stirred
  • 2 tbsp. water
  • 2 tbsp. brown sugar
  • 2 tbsp. toasted sesame oil
  • 2 tbsp. seasoned rice vinegar
  • 1 tsp. ground ginger
  • 1 tsp. red pepper flakes

Salad:

  • 4 c. Rotisserie Chicken
  • 3 c. finely shredded cabbage
  • 1 seedless cucumber, chopped
  • 1 bunch of scallions, green and white parts, chopped diagonally
  • 1 c. cilantro, chopped
  • 1 small can of Mandarin oranges, drained and chopped

Directions

In a large serving bowl, whisk together all dressing ingredients. Toss salad ingredients with dressing in a large bowl until combined well.

Tip: Almond Butter is rich in antioxidants and protein and makes an incredible snack dip. Enjoy it by itself, with sliced apples sprinkled with cinnamon, or with baby carrots for dipping!
