Scrambled Eggs with Fresh Morels

Ingredients

  • 2 tbsp. butter
  • ½ lb. fresh morel mushrooms, halved
  • 8 large eggs
  • 4 tbsp. heavy cream
  • 2 tbsp. chives, diced
  • salt and pepper, to taste

Directions

Melt butter in pan and cook morels over medium heat until softened, stir frequently. Beat eggs slightly, add cream and mix lightly. Snip approximately 2 tbsp. of chives into egg mixture. Add egg mixture to sautéed morels and cook slowly over low heat until soft curds have formed. Quickly season with salt and pepper and serve immediately on warm platter.
